What is “fried rice disease”?

“Fried rice disease” is a type of food poisoning caused by a bacterium called Bacillus cereus.

Bacillus cereus is a very common bacterium, but can cause problems when it contaminates food that is not properly stored.

Although rice and pasta are the main causes of food poisoning from this bacteria, cooked foods such as vegetables or meat can also be contaminated and cause symptoms.

Symptoms of “fried rice disease” include diarrhea and vomiting, and some people may experience only one of them.

Most cases of this disease are not fatal. But in 2008 there was a tragic case when a 20-year-old man died from the condition.

He explains in the video that rice and pasta should be avoided leaving at room temperature for more than 2 hours before eating.

He also said that when he was studying medicine, he had an easy-to-remember phrase:  “Re-heat rice, B. cereus”  (Reheat rice, watch out for Bacillus cereus) to remind him. That if he was going to eat leftover rice. He had to reheat it first because of the risk of Bacillus cereus bacteria.

For your safety, experts recommend following these steps when handling food.

  • Store rice and pasta in a cool, dry place.
  • Wash hands with soap before and after handling food.
  • Make sure the food is cooked thoroughly.
  • Do not let food cool for more than 2 hours.
  • Reheat food thoroughly before eating.
  • Store leftover food in a tightly closed container.
  • Throw away food that has been cooked for more than 2 days.

No matter how frugal you are these days, the rule of thumb is:  if you’re not sure if food is safe, don’t eat it.
